74: Add first e2e test for post-Merge indexing #79

This adds the first, simple end-to-end test for post-Merge indexing.

Like all the existing tests, this new test does not configure its own test environment, it expects it to exist already.

There is another issue open for automating the test environment setup: https://github.com/vulcanize/ipld-eth-beacon-indexer/issues/78
